Patti Steinmuller is a Registered Dietitian, American Dietetic Association, and a Certified Exercise Specialist, American College of Sports Medicine. She developed and teaches an undergraduate course, HDFN 411: Nutrition for Sports and Exercise, and a graduate course, HDFN 526: Nutrition for Fitness and Performance. HDFN 526 is conducted online as a distance education offering of the National Teachers Enhancement Network (NTEN).
Patti's experience working with teachers via computer during the (NTEN) Winter Olympics Sports Nutrition mini-course convinced her to pursue teaching a full university course online. The course she developed, HDFN 526: Nutrition for Fitness and Performance, is a three-credit graduate course offered online in the fall term. Registrants are teachers, registered dietitians, exercise and fitness trainers, coaches, extension agents, health professionals, and educators in the United States and beyond. HDFN 526 is a dynamic, challenging course that uses computer-mediated discussions and Internet resources extensively.

Patti also conducts sports nutrition presentations and workshops on topics such as energy balance, hydration, sports drinks, carbohydrate and protein needs of physically active people, dietary supplements, nutritional ergogenic aids, disordered eating, the female athlete triad, and body weight and body composition issues. She educates individuals on healthful eating and physical activity practices and issues of body image and body self-acceptance.
When she is not teaching Patti enjoys hiking, bicycling, and cross-country skiing with her family. She belongs to a women's hiking group that hikes weekly in summer and skis the backcountry in winter.
